- 2 Cups Cherry Tomatoes
- 1 Cup Pitted Black Olives
- 2 Cloves Minced Garlic
- 1 Medium Sized Minced Shallot
- 1 cup Burrata Cheese
- 1 Egg
- 1 cup Sifted All Purpose Flour
- 1 cup Unseasoned Bread Crumbs
- Canola oil or any type of high flashpoint oil for frying
- ½ Cups Fresh Cilantro Leaves
- 1 Cup Pureed Tomatoes
- Fresh Basil for Garnish
Begin by sautéing 2 cups of cherry tomatoes and 1 cup of black olives to bring out their rich flavors. Add in 1 chopped shallot and 2 minced garlic cloves, seasoning with salt and pepper, and sauté for 5-10 minutes. Then add the 1 cup pureed tomatoes to achieve the desired consistency.
Next, mold 1 cup of Burrata cheese into a ball and coat it with flour, egg, and breadcrumbs, ensuring a substantial coating. Deep fry the coated cheese in high flashpoint oil until it attains a golden brown hue. Serve the fried Burrata over the sauce mixture and top it with cilantro leaves for a delightful garnish and an extra burst of flavor.
