Bruschetta was discovered by the Etruscans in ancient Rome. The word “Bruschetta” comes from the Italian verb “bruscare,” which means “to roast over coals.” It began as a peasant meal. They would use stale bread instead of discarding it. They would rub it with garlic, drizzle with olive oil, and roast it over fire. Then, they would top it with whatever was available, usually tomatoes, basil, olives, onions, etc.
Over time, it developed throughout Italy with each region using different toppings. For example, Tuscans use tomatoes, basil, and Mozzarella cheese, referred to as “Bruschetta Caprese.” In Puglia, they use tomatoes, oregano, and Pecorino cheese. In Sicily, they add anchovies and capers to give it a Sicilian salty twist. Throughout Italy, sharing a plate of Bruschetta is a symbol of hospitality.

Bruschetta Instructions:

Chefs all over the world also use the toasted bread as somewhat of an artist’s canvas. They also have different themes. For example, a fruit theme can be seen on restaurant menus using fruits and berries instead of olive oil, using honey and jams on the toasted bread.
I have compiled a traditional recipe we have used for many generations in my family. We use plum tomatoes because they have less pulp and more meat. They can be diced into 1/4″ cubes and lay nicely on the toasted bread. Red onion has a less powerful flavor than most onions and adds a nice purple hue for a perfect presentation. The garlic adds bursts of Italian flair to the recipe along with delicate strips of basil as a topping. Finally, the balsamic glaze as a dressing also adds a Caprese version to the recipe.
