Burrata Crocante is one of my favorite Burrata cheese recipes. This soft cheese was discovered in Puglia, Italy around 1920 when the Mozzarella cheese makers had leftover curd. They mixed it with cream and made a soft, creamy cheese. The word Burrata comes from the Italian word burro means “butter” in Italian. “Crocante” means crunchy in Portuguese. Therefore, we have an Italian/Brazilian recipe that means “crunchy cheese”. Burrata cheese recipes are popular in Italian culture, usually in salads with various types of fresh tomatoes. Burrata is an Italian cow milk cheese, very similar to ricotta cheese, but smoother and creamier. Also in the Italian cow milk cheese family is Parmigiano Reggiano and Asiago. Remember not all fresh Italian cheeses are from cow’s milk. Some fresh Italian cheese is made from goat, sheep, or buffalo milk.

Ingredients:
- 2 Cups Fresh Cherry Tomatoes
- 1 Cup Pitted Black Olives
- 2 Cloves Minced Fresh Garlic
- 1 Medium Sized Minced Shallot
- 1 cup Fresh Burrata Cheese
- 1 Egg
- 1 cup Sifted All Purpose Flour
- 1 cup Unseasoned Bread Crumbs
- Canola oil or any type of high flashpoint oil for frying
- ½ cup fresh Cilantro Leaves
- 1 Cup Pureed Tomatoes
- Fresh Basil leaves for Garnish
- 2 tbsp extra virgin olive oil
- Salt and black pepper to taste
Instructions:
- Begin by sautéing in extra-virgin olive oil 2 cups of cherry tomatoes and 1 cup of black olives on medium heat to bring out their rich flavors. Add in 1 chopped shallot and 2 minced garlic cloves, seasoning with salt and pepper, and sauté for 5-10 minutes. Then add the 1 cup pureed tomatoes to achieve the desired consistency.
- Next, mold 1 cup of creamy Burrata cheese into a ball and coat it with flour, egg, and breadcrumbs, ensuring a substantial coating. Deep fry the coated cheese in high flashpoint oil until it attains a golden brown hue. Serve the fried Burrata over the sauce mixture and top it with cilantro or fresh basil leaves and a drizzle of olive oil or truffle oil for a delightful garnish and an extra burst of flavor.
Variations:
If you prefer a drier salad, you can omit the tomato puree. You can also substitute the olives with capers for a slightly saltier flavor. Sometimes, I skip the cherry tomatoes and serve the crispy fried cheese balls in a tomato sauce with olives, similar to puttanesca sauce.
Try adding a small amount of fresh cream
to your tomato puree before adding it to your dish. The heavy cream
will create a creamy pink sauce. You can also add fresh veggies
to the fresh cherry tomatoes
to add more depth to your burrata cheese recipe.
A ball of fresh mozzarella cheese or other soft Italian cheese can be substituted for burrata cheese if your grocery store can’t supply Burrata cheese. Also, you can sprinkle various types of sharp Italian fresh cheese on your burrata recipe to enhance the tangy flavor. Also, Pesto sauce can be added to ad a burst of Basil flavor.
A Burrata salad can be created by topping your favorite salad with the fried cheese ball.
To create a complete dish, consider using penne or rigatoni instead of cherry tomatoes. You can also add meats like sausage, ground pork, veal, or beef to create a Bolognese sauce to enjoy with crunchy cheese balls.
